The Corporate CDM will assist facilities in all aspects of culinary operations. This includes but not limited to ordering, budgeting, staffing, menu planning, dining services, and overall sanitation of the culinary department. The Corporate CDM will train new CDMs.

Responsibilities:
- Consults and assists all 81 skilled nursing facilities' dietary departments
- Carries out supervisory responsibilities in accordance with the organizational policies and applicable laws
- Uses independent judgment and discretion on behalf of the organization in the performance of these duties.
- Assists all facilities in training of CDMs.
- Willing to travel and assist all CIENA managed communities, this includes overnight stays in outlying facilities.
- Reviews food service polices along with the Director of Dietary and Nutritional Services yearly.
- May be asked to assist when we have CDM vacancies and leaves and able to perform the responsibilities of the CDM Job Description.
- Provides in-servicing to culinary departments on needed topics.
- Assist facilities with the fine dining program.
- Reviews budgets with CDMs and provides assistance with budgetary compliance.
- Participate in companywide dietary meeting.
- Works with Risk Management in reducing number of work-related injuries in the culinary department.
- Become enrolled as a ServSafe trainer and proctor to teach the course and administer the exam to members of the CIENA Organization that require this certification.
Requirements:
Education and/or Experience:
- Must be a Certified Dietary Manager
- Minimum five-year supervised food service experience in an institutional setting focusing on planning, preparing and servicing regular and therapeutic diets.
Certificates, Licenses, Registrations:
- Successful completion as a Certified Dietary Manager approved by the Association of Nutrition & Foodservice Professionals (ANFP)
- ServSafe Certification
- Will enroll to become a ServSafe Trainer and Proctor
